- 1 tablespoon oil
- 1 large onion
- 1⁄4 teaspoon cinnamon
- 1⁄4 teaspoon cardamom
- 1 teaspoon fresh ginger, grated
- 2 garlic cloves, minced
- 1⁄2 cup tomatoes, chopped (about 1 medium)
- 1 tablespoon coriander
- 1⁄2 teaspoon garam masala
- 1⁄2 teaspoon paprika
- 1⁄2 teaspoon salt
- 1 (10 ounce) package frozen chopped spinach, thawed & undrained
- 1 (12 ounce) package extra firm tofu, drained & cubed
- 1⁄4 cup heavy cream
directions
- Saute onion, cinnamon, cardamom, and ginger in 1 tablespoon oil until onion is soft. Then add garlic and chopped tomatoes, reduce heat and simmer for 2 minutes.
- Add coriander, garam masala, paprika, and salt, and spinach, cover and simmer on low heat for approximately 10 minutes.
- Add tofu cubes and simmer for another 20 minutes.
- Remove from heat, add cream, and stir until heated through.
