Quick and Easy Raita

  • Dice the cucumbers, onion and tomato and toss them all together in a large bowl.
  • Mix in the yogurt, starting with half a cup, and add more if necessary. Salt it to your liking and let it sit in the refrigerator for at least 30 minutes to get the best flavour out of your Raita.

  1. Love the idea of adding tomato to raita. Served with Uncle Bill's Barbecue Tandoori Chicken (Recipe #63800), but this would be great as a complement to any curry. I have 2 family members who don't like raw onion, so I substituted chopped scallions (green stalks only).
     
  2. This is different to the raitas I usually make so I was keen to try it. I don't recall ever adding tomato to a raita before, but it worked really well. This is a pleasant fresh tasting dish, which would also work well as a side dish to other cuisines.
     
  3. I seeded the cucumbers and tomato before dicing. I served this with your Indian Lime Chicken" Recipe #149292 in pitas and we enjoyed the rest of it with pita crisps. Thank you for sharing your recipe!

I started cooking when I was umm....12 and a half and Ive been in love with it ever since...My first project was the classic batch of brownies. I used a pan that was too big and I got really really flat brownies.....For the frosting I used granulated sugar and had crunchy frosting haha..... Ive gotten much better since then! I tend to get discouraged very easily if something I make does not come out like it was expected to....I can even get depressed over it..... I have plans on going to Le Courdon Bleu Sydney in mid 2008 and completing the Grand Diploma there...... This is my cat Kiara. I found her in the backyard when I was 10, and I started feeding her toast and grape jelly.
