Simple Microwave Chicken Drumsticks

A potent curry flavor defines this easy, ketchup or bbq sauce base for microwaved drumsticks. Perfect for something quick and simple. Can be adapted by adding some chopped apple or sultanas and served with Basmati rice.

Ingredients:

Servings: 3

• 200 ml ketchup
• 20 g curry powder
• 2 g cayenne pepper
• 8 chicken legs

Directions:

1. In a large, round microwave safe casserole dish combine the ketchup, curry powder and cayenne powder and mix together. Add chicken pieces and turn to coat, let stand for 5 minutes.
2. Arrange chicken legs in a fan, with the thin part of the legs in the center of the dish. Cover and cook in the microwave on high for 12 to 15 minutes or until chicken is cooked through and juices run clear.
