Easiest Lamb Shanks Ever!

ingredients
- 1 (810 g) can whole tomatoes
- 1 (410 g) can chopped indian style tomatoes, Ardmona Thick & Rich
- 4 lamb shanks
- 1 small onion, chopped
- 1⁄4 teaspoon garam masala
- 1⁄4 teaspoon cumin, ground
- 1⁄4 teaspoon cardamom, ground
- 1 tablespoon fresh coriander, chopped
directions
- Simply place all ingredients, except cilantro (coriander) into a crockpot, and cook on low for 6-8 hours, or on high for 4 hours.
- Serve with polenta or mashed potatoes, and top with chopped fresh cilantro (coriander).

I used 3 frenched cut lamb shanks and I could not get Ardmona Indian style tomatoes and settled for basil and garlic style which still went really well flavour wise. Though after the 4 hours cooked on high they were well done and parting from the bone they did not have that tenderness that oven cooking gives them and the meat was a little chewy so would definately go with cooking on low in the crock pot or doing in a slow oven. Well..about me! I'm married, I have 2 kids (both boys), and I live in Australia.
I have loved cooking for as long as I can remember, and have become completely addicted to browsing through Zaar looking for new recipes!
I have a small animal shelter for rabbits and guinea pigs, and spend most of my time looking after kids or critters!.
My favourite cookbooks are The Essential Pasta Cookbook, The Central Cookery Book, Flo Bjielkie-Peterson's Country Cookbook, and Greek Cooking (I bought that one in Greece, and it's FANTASTIC). At the minute, we are getting ready to move, which is forcing me to sort through my recipe cabinet. I have been trying out all those recipes that are scribbled on pieces of paper, or torn from magazines, so I can decide ifthey are keepers or not. So far I've found a lot of keepers, and will work at posting them on here.
I'm passionate about a lot of things, mainly my kids, animals, and cooking.
I won't even start on my peeves, we'll be here all night! lol
